Instead of standard birthday cakes for parties for adults and kids, try ice cream cake recipes like Ice Cream Pie and Layered Ice Cream Cake.

Ice cream cakes make great cakes for birthday parties, anniversaries and other holidays like Valentine’s Day or St. Patrick’s Day. These cakes are easy to customize, easy to assemble and easy to serve. The next time a party or holiday calls for cake, try an easy ice cream cake recipe.

Ice Cream Pie is a Great Birthday Cake

Ice Cream Pie is one of the easiest ice cream cakes to customize for individual taste. The recipe calls for mint chocolate-chip ice cream and mint Oreo®-style cookies. Any flavor ice cream can be substituted. Oreo cookies are available in a wide range of flavors. Try strawberry ice cream with strawberry-cream cookies for a sweet alternative to traditional birthday cake. This ice cream cake must be prepared the day before or morning of an afternoon party as it takes a total of 5 hours to freeze over several steps. Serves 8 to 12.

Ingredients:

  • 32 mint flavored cream-filled cookies
  • ¼ cup plus 2 tablespoons chocolate ice cream topping
  • ½ gallon mint chocolate-chip ice cream

Directions:

  1. Coat a 9-inch pie plate or pie pan lightly with nonstick spray.
  2. Using a food processor, pulse half of the cookies until they are crumbs. Add ¼ cup of ice cream topping and blend until moistened. If a food processor is unavailable, chop up cookies with a knife until they are crushed. Put cookie crumbs in a plastic bag with ice cream topping and squeeze bag until crumbs are moistened.
  3. Press cookie-and-topping mixture into the bottom of the pie plate and freeze for 30 minutes.
  4. Slightly soften ice cream in microwave for 30 seconds or leave out of freezer for a few minutes. Scoop half the ice cream into the pie plate. Break 8 cookies in half and press them into the first ice cream layer. Freeze for 1 hour.
  5. Place remainder of ice cream on top of the first layer. Break remaining cookies into pieces and top the pie with them.
  6. Drizzle with 2 tablespoons of chocolate ice cream topping. Freeze 3 hours or until firm.

Layered Ice Cream Cake Is Perfect for Children's Parties

Layered Ice Cream Cake is easy to prepare and in its simplest form is a chocolate-and-vanilla treat. This recipe calls for homemade whipped cream as icing, but whipped cream topping or a quart of vanilla ice cream can be substituted. If substituting vanilla ice cream for the whipped cream, try topping the cake in a hard-shell ice cream topping. The topping can be used to write a birthday or holiday message.

This recipe also uses milk chocolate chips but butterscotch chips, chopped nuts, sprinkles and crushed candy bars can be substituted. This recipe serves 6 and is easily doubled by using a second loaf pan. This can be made the morning of an afternoon party or further in advance.

Ingredients:

  • 1 cup whipped cream
  • 2 tablespoons confectioners’ sugar
  • 6 ice cream sandwiches
  • ½ cup milk chocolate chips

Directions:

  1. Line a loaf pan with wax paper so extra paper folds over the edge of the pan.
  2. Beat sugar and cream until whipped cream is stiff.
  3. Place three ice cream sandwiches in the loaf pan, cutting them to fit if necessary.
  4. Layer half the whipped cream over the sandwiches and top with another row of sandwiches.
  5. Frost the top of the cake with remaining whipped cream and top with chocolate chips. Freeze until firm, about 1 hour.
  6. To serve, lift cake out of the pan with wax paper.

Celebrating summer birthdays with ice cream cake is a great way to cool off guests and enjoy a special day. Ice Cream Pie and Layered Ice Cream Cake are two very simple recipes that can be customized for personal tastes. They also save money over buying a store-bought birthday cake. These ice cream cakes work great for celebrating anniversaries and other special holidays like Valentine’s Day and St. Patrick’s Day.
